Blogmas day 12; making Christmas snacks

Welcome back to blogmas day 12! Today I’m going to be sharing some snack ideas with you. We’ve got candy cane pieces to the good ol’ classic mince pie. 

The first one is as I mentioned earlier: candy cane pieces. In all honesty these were meant to be candy canes but that didn’t work out (everyone’s best friend cristallisation)

For this you need to make a simple syrup by dissolving one cup of sugar in one cup of water and boiling for 3mins. 

Next you want to combine a cup (11) of syrup (you can save the rest) Three cups of sugar (21oz )and 1/4 cup of water (2oz) a dash of peppermint extract. Stir until well dissolved, then place on the heat until it reached 300* Fahrenheit. And add in your food colouring if desired. Then place on a tray of grease proof paper and once it’s set smash it up into small pieces that you can eat or put in hot chocolate!

My mum and I entered a mince pie baking contest last year, she won and I came third! I am quite a connoisseur when it come to this festive treat, yesterday I ate 9 mince pies… So it’s only fair that we share our recipe with you. First of just preheat the oven to 200* Celsius. We used Paul Paul Hollywood’s pastry. But you could make your own using your recipe or if you’re in a rush get some store bought. Next you want to fill it with your mince meat, you can make your own or buy a jar. We spiced ours using a bit of cinnamon, ground all spice and cinnamon. Cut out your bases and tops (we made circles and stars) then bake for 15-20 mins at 200* Celsius. Take them out and let them cool before tucking into them.
